Roasts

Standing Rib Roast - This is an uncomplicated main course to prepare, which is especially good for Christmas when you do not want to spend a lot of time cooking.  I like to serve it with zinfandel stock, which does best if it simmers all day on the stove.  Make it 1-3 days in advance..

Pot Roast with Vegetables - Start this meal at least 3 hours before you want to eat.  The meat is fork tender!   
Beef Sandwiches - Serve with guacamole and chips
California Chili  - serve with corn bread and bowls of sliced green onions, sour cream, and grated cheddar cheese.  This is great for Super Bowl Sunday. 
 

  Steaks

Flank Steak Marinade - This is an easy marinade which is great on flank steak, or try  Flank Steak with Moroccan Spices with  Grilled Eggplant and Peppers

Steak Diane - This steak is wonderful with wide egg noodles for dessert try Strawberries with Sugar and Vinegar


 

  Ground Beef

Spaghetti and Meatballs - My son made this for a group of friends  and he said it turned out great.  He even made the sauce!

Lasagna Bolonese  Although very labor-intensive, this Italian meal is excellent for a festive occasion.  Plan on a day of cooking.  To make the lasagna, first make Sugo Di Carne (Meat-Tomato Sauce) and the Balsamella (Italian White Sauce).  This Italian dinner goes well with  French Bread, and a green salad. 
Skillet Tamale Pie - this is an easy, quick yet tasty meal.  Serve it with a green salad.
Spanish Rice with Ground Beef - this is also an easy meal.  Serve it with chips and a green salad.

  Ethnic Dishes
Stir Fry:

Corned Beef and Cabbage - give yourself 5 to 6 hours to make this St. Patrick's meal. Serve with red potatoes.
Korean Barbequed Beef Serve with Korean Clear Noodles with Vegetables and Cucumber Salad   - I submitted this recipe to Big Chef and 100% said they would make it again and 10 marked it as a favorite. One even wrote, "This was the best flavored beef I have ever tasted!"  I don't know if I'd go that far!
