Oriental Crispy Coleslaw 

 


This is a good salad to take to a potluck.  Make it the night before serving.

 

1 pound coleslaw mix

1 bunch scallions, diced

1 package chicken flavor Ramen soup

½ cup shelled sunflower seeds

¾ cup sliced almonds (toasted or raw)

1 cup sugar

1 cup olive oil

¼ cup white vinegar

 

1.  Toss coleslaw mix and diced scallions in a bowl. Set aside.

2.  In a separate bowl mix seasoning packet from Ramen soup, sugar, olive oil, and vinegar.  Stir well. This mixture will be slightly gritty.

3.  Pour over coleslaw mixture and toss. Cover and refrigerate for at least 4 hours or make the night before.

4.  Crush noodles from Ramen soup. Mix with sunflower seeds and almonds.


Toss nut mixture into salad just before serving.
