Mashed Potatoes 

 


2 pounds potatoes, scrubbed (4 potatoes)
4 tablespoons unsalted butter (½ stick), melted
1 cup milk, warmed (add as needed)
1½ teaspoons table salt
Ground black pepper

 


1.    Place potatoes in large saucepan and cover with 1 inch salted water.  Bring to boil over high heat; reduce heat to medium-low and simmer until potatoes are tender (a paring knife can be slipped into and out of center of potatoes with very little resistance), 20 to 30 minutes. Drain.

2.    While potatoes are cooking, melt butter in small pan, stir in milk.

3.    Mash potatoes with potato masher or fork and stir in milk-butter mixture.

4.    Add salt and pepper to taste. Serve immediately.
