Cherry Tomatoes with Feta & Tapenade

 

Watch them disappear with a good red wine before a steak dinner.

 

1 pint cherry tomatoes - get the largest cherry tomatoes you can find

4 ounces plain goat cheese

2 tablespoons prepared green or black olive tapenade (in gourmet section of market)

2 tablespoons minced fresh parsley leaves

 

1.   Cut ¼ -inch slice off top of each tomato and gently scoop out seeds.

2.   Stir goat cheese and tapenade together in bowl until smooth.

3.   Fill each tomato with mixture.

4.   Transfer to platter and garnish with parsley. Serve.

 

Can be refrigerated for up to 1 day.

 

Makes about 24 pieces
