Chicken 

Oven-Barbequed Chicken Quarters - this is an excellent chicken dish - the chicken comes out cooked yet moist.  Serve it with black-eyed peas, cornbread, and a green salad.  Melon with sherbet makes a quick dessert.

Poulet en Papillote - add an iceberg lettuce salad with blue cheese dressing

Chicken Divan - this is a classic chicken casserole with rice and broccoli.
Chicken for a Crowd - precook chicken in the oven and then grill.  Serve with a watermelon appetizer and Crunchy Napa Cabbage Slaw .   

Chicken Casserole  - This is made with peppers, chiles, chicken, and tortillas.  It's good to serve to a crowd.

Chicken Enchiladas with Homemade Red Chile Sauce - Serve with corn-on-the-cob, a green salad, and refried beans.

Chicken Stir Fry with Pineapple in Sweet & Sour Sauce

 

Golden Chicken Curry - I knew Rae Shillman Barnes would have a good curry dish to share with me, and this one has since been a favorite with my sister-in-law, Mary Ann Kinser. 

Parmesan Chicken - One of my son's favorite dishes.  I changed my original recipe to one that is baked in the oven.  It is lighter and has less oil. 

Chicken Provencal – serve with rice, French bread, or polenta

Thanksgiving Dinner at it's best! Turkey and gravy with mashed potatoes, steamed green beans, cranberry sauce, pear and walnut salad, and pumpkin pie with whipped cream.
