Spinach Dip with Veggies
1 package frozen chopped spinach or 2 cups finely chopped fresh spinach
1 cup sour cream
½ cup mayonnaise
½ cup minced fresh parsley
½ cup minced scallions (whites only)
1 can chopped water chestnuts
½ teaspoon Beau Monde seasoning
½ teaspoon dried dill weed
salt and pepper
1. Cook frozen spinach and squeeze out excess water
2. Mix sour cream, mayonnaise, parsley, scallions, water chestnuts and spices
3. Add spinach
4. Cover and refrigerate overnight
5. Serve in hollowed red cabbage to hold dip (my preference) or round loaf of French bread
