Bread Stuffing with Celery & Onions 

 


This is an old-fashioned bread stuffing. 

 

¾ pound of stale bread (I use honey wheat berry)
½ teaspoon poultry seasoning

1 teaspoon salt
⅛ teaspoon pepper

3 tablespoons butter
1½ cups diced celery
1 chopped onion
½ cup chicken broth

1. Pull bread into small pieces (about 6 cups)
2. Melt butter in large frying pan.
3. Add celery and onion and cook with frequent stirring until soft and yellow.
4. Add bread and seasonings and toss together until well mixed. Cool.
5. Add the liquid, mix lightly with a fork and stuff lightly into dressed turkey.

 

I sometimes add raisins and/or sliced water chestnuts.

 

To Make Ahead:  To cut down prep time on Thanksgiving day, I do some steps the day before such as breaking the bread.  I also cook the celery and onion and put it in a small bowl in the refrigerator.
